Hi Creative Kale Lovers,
I wanted to get more vegetables into everything I made so I created “Green Monster Hummus”.
Why the scary name? Well green can be scary to many people so why not have some fun with it. My recipe is best made with a Cuisinart over a blender. I have made it with a low end blender and a high end blender and the Cuisinart wins for several reasons: Easier and quicker to chop up the ingredients. Easier to get the hummus out of the container and you will use less oil as it mixes better. The blender does give a smoother finish but in my opinion, hummus does not need to be super smooth.
Green Monster Hummus
- 1 can Eden chick peas (non organic works too – add less oil olive)
- 1/3 cup tahini
- 3 leaves of black kale (dark green)
- 1/2 tsp turmeric
- 1/4 tsp curry
- 1/2 tsp pink Himalayan salt
- 1 tsp black pepper
- 1 organic lemon – rind and lemon juice needed
- 1/4 cup Apple cider vinegar – use organic
- 1/3 cup olive oil – cold pressed is best
Directions
- Drain chick peas and rinse
- Add chick peas to Cuisinart
- Add tahini to Cuisinart
- Chop kale in to smaller sections and add to Cuisinart
- Add spices, salt and pepper
- Add rind of lemon and all the juice from the lemon
- Add vinegar
- Start Cuisinart and mix well. It will be a chunky.
- Add olive oil as Cusinart is mixing.
- If the mixture is too dry, add more olive oil and vinegar or lemon juice
Enjoy on rice crackers or as a side on salad.
